a must for mamaliga or polenta
This product is a must have if you're a hard core Romanian and Italian and want to cook Mamaliga/Polenta completely from scratch. I use the Vitamix grinder (sold separately) and grind enough for a portion of mamaliga. However, you MUST sift it, because the grinder doesn't grind all the corn fragments to the same size. Then, and I've noticed the exact measure depends on the corn, boil your water and slowly add the corn flower while mixing with a wisk. In 15 minutes or so you will get mamaliga, and you can add your cheese/butter at the end (or polenta if you add the butter and cheese while the corn flour is still boiling).

Love this corn
I use this to make polenta, corn bread, tamale pie and a few other things. I grind it using the grain mill attachment to my KitchenAid stand mixer. It works perfectly and tastes really fresh. 177 grams of this corn will make 1 cup of corn meal. For the polenta, I just grind 177 grams of this corn. I take two cups of water, and pour enough onto the corn to just make it wet. I put the remainder in a pot and bring it to a boil, and add a handful of raisins. Then I mix in the dampened corn, and bring it back to a boil while stirring continuously. It will get thick very quickly. Serve. This procedure reduces lump formation that can happen when you put corn meal directly into boiling water.

very easy, taste much better freshly ground
making my own polenta and grits (does anyone really know what the difference is?). very easy, tastes much better freshly ground than anything you buy in store that was ground up centuries ago. One half cup whole corn made a bit more than half a cup ground. which was enough for a big serving or two small ones. (A little more than 2 cups water, I am never precise, and some grated cheese and butter) only took a minute to grind. never buying store grits again. Make extra and keep in fridge for in microwave later. Even better then

Perfect for Moist Heat Bags using Corn
For the price, the best way to get corn kernels for use in microwave oven with moist heat bags. Just fill a tall sock with a lot of cotton content and spritz with water before heating on low for a few minutes. The bag retains the heat and it is moist heat that does not make the corn soggy. The heat holds for up to an hour! Am recommending use of corn in lieu rice or beans as filler and I like the organic corn. Looking at comparable prices, this is the best value for the purchase.

Good, clean product for long term storage. One of my bags broke though, so be careful when handling it.
