Perfect for what they are made for
These trays work perfect for my small mobile pizza needs. The smaller size is great for stowing the stacked trays in the refridgerator for long cold fermentations. The smooth surface along with a dusting of flour makes for easy removal of dough balls. Cleanup is easy as well.The ability to stack the trays is nice so you only need a couple lids at most. While not airtight, it's close enough to prevent any negative aspects on your dough. I have done all day room temperature, as well as 4-6 day cold fermentations using either stacked containers or the lids, and never had any issues such as dried out dough or skin development.As some have already negatively reviewed, these are a bit on the expensive side. You can buy larger dough boxes from a restaurant supply store for a lot less. BUT, those larger dough boxes won't usually fit in home refrigerators. The DoughMate Artisan trays are perfect for the fridge and in coolers when I do mobile pizza bakes.I typically have six 270g dough balls per each box and there's plenty of room for the entire fermentation. I have bought three of these kits already and likely will buy more.

Scaled down (and updated) version of what is used in pro commissaries
I have been using these boxes for almost 18 months now. They are a perfect size for the home pizza maker. In my teens, I worked for a local big-chain franchisee in their central commissary. These are an improved version of the larger commercial dough boxes. Nearly airtight, fits in a standard fridge, great forgiving material, and easy to clean. It's kind of an esoteric item to be "excited" about, but this is one piece of my pizza accoutrement that I haven't second guessed the purchase of. Perfect for it's intended use, also great for storing beef balls for smash burgers in advance of large parties.

So perfect, I bought them twice
I purchased my first set about 6 years ago and loved them. They’re not only extremely professional quality, they easily fit in my refrigerator, which is a smaller, apartment sized model. I do lightweight catering and travel with these frequently and they’re still looking like brand new, don’t scuff, scratch or dent easily, and most importantly…they’ve held their shape for airtight stacking and cover fit. They’re so great, I bought another set a few years later and these fit the originals like a glove!

really like them
We use it primarily for pizza dough balls but I've been doing the bulk fermentation in them as well and have had a lot more success in these bins vs, covering the mixing bowl. The lids don't click in place but they're secure enough that nothing gets dried out. There is only one lid between the two boxes, which is OK but I do kinda wish there was a second lid. Do I need it? I guess not really because they're built to be stacked so the other box is the lid for the other one. They've also held up well in the proofing drawer in the oven. The scraper was surprisingly a heavy duty thick plastic tool. I was expecting more of a flimsy throw in so that was cool. I usually use my metal bench knife but it's good to have the plastic one because I'm wary of scraping these bins up because I don't think they'll hold up long if they get scuffed. I suggest lightly spraying or flouring surfaces because it'll be a bit sticky getting doughs out if not, but still doable w/ a scraper.Also, bonus, perfect size/height for storing/transporting cupcakes.

After learning the nuances, I am glad I bought this box.
Now that I have spent about 6 months making pizzas, I have finally figured out many of the smaller details and I'm making pizza dough that I love. When I make a batch of dough, no matter the container I put it in, the lid always pops off and the dough gets hard because I don't notice. It is also a pain having five containers in my side-by-side fridge (sbs fridges suck when you really need space).So, when I read about dough boxes and found this set for a really great price I jumped on it. It arrived and the first thing I checked was how good it seals. Well, it doesn't really. The lid sits in a groove but there of no "locking" or a tight seal. Believe this and other reviewers who tell you this. Also, at first I thought this was a terrible design but I have found out it works great.I put 4 balls of dough in overnight and even had some containers on top. The next day, the top of the dough was a little dry. Maybe my expectations are misaligned with the actual way this product should perform. Perhaps, it should not seal because the gases need to release. I just wish the seller/manufacturer had done a better job of describing the product to manage the buyer's expectations.I thought about return the product but then decided to wait because I do like that I can store 6, 280 gram dough balls inside with enough room for each to expand and not touch. I can also store things on top of the container, which gives back some of my fridge space. Might I mention, the image that shows this in a fridge is not a side-by-side fridge. This will not fit length wise and takes the full width. If you order this item, pay attention to the dimensions.Overall, the box is not going to hold gas so the lid isn't going to pop off and let dough expand everywhere. It is a good way to keep several balls of dough in the fridge for 3-4 days. One more thing, the included spatula is of good quality but I find it easy enough to just grab the dough with my hands.Back for an update after having this in the fridge for 3 days. I like it a lot better now. Apparently, you should put it in the fridge and let it acclimate to the temperature. Once it does, the box gets cold and holds enough moisture to keep the dough perfectly moist. I did put a piece of plastic wrap on top of the dough but now that the box is "working", I can see that it is not necessary.Overall, this box is great IF you give it time to come up to temperature and if it will fit in your fridge.
