Anasazi Beans were one of the few crops cultivated by the ancestral Pueblos of the southwest. Anasazi (ahn-a-sa-zee) is a Navajo word meaning "ancient ones". The story of Anasazi beans varies, depending on who is telling it. In popular mythology, the beans were uncovered by an anthropologist, who discovered a 1,500 year old tightly sealed jar of them at a dig in New Mexico. Some of the beans germinated, and the new variety of bean entered cultivation again. Since most botanists agree that most beans are unable to germinate after approximately 50 years, it is more probable that the beans remained in constant cultivation in the Southwest, probably in Native American gardens, and that they were picked up by companies looking for new “boutique beans.”

Best Bean ever
I received this order several days before it was estimated. I have cooked a small batch and was blown away by the incredible sweet taste and creamy texture of this bean. It was the first time I have had then and decided to try because a chef recommended them. I know they are expensive but I believe they will now be my go to bean. I am a vegetarian as a choice I made a few years back. My health was not as good as I would have liked when I retired so I changed my diet to a plant based one and eliminated soda and nearly all sweets. This bean is now a staple in my diet along with whole grains, fruits and vegetables.

My favorite beans
Don't have to soak them before cooking, though you can if you'd like; I haven't found them to be especially gassy & they cook completely with zero hard nibs. The flavor is as described- creamy, rich, great vehicle harmonizing with other flavors without being too bland. They look like Jacob's Cattle beans, but in my opinion, have a richer flavor. The purveyor delivers so expeditiously, it's ALMOST in time for dinner!

What a deal!
These beans are so fresh and delicious! And they sell for less on here than they do at the mill in Dove Creek?!? Anyhow, you won't be disappointed. They make fantastic chili, and I use them analogously with pinto and black beans in recipes. Good food, and good for you!

Excellent taste!
Love these beans. They have a better taste than other kinds of beans. Just try them once and you will be hooked. They cook faster than most beans. Price is somewhat high but Adobe Milling seems to be the cheapest.
