Bat Guano

By itself, it is like a cheep box wine. But I added in two large pieces of charred bourbon barrel, 3 peppercorns and then, at the finish, about a half cup of french oak chips (only for a couple days) which adds great complexity, tastes of caramel, berry, and a nice round, yet soft mouth feel. My only complaint about any of these kits is that they tend to stop fermenting a little short of dry. I had to ferment this 4 times as long as I normally would but I achieved .994 or .996 in SG, the brix was a tad high. But once I added the above ingredients, it balanced the sugars and made an almost perfect 6 gallons of wine. Well, I am using 5 gallon carboys so... also after testing, racking it really takes a lot of the volume down. I got the flavor so perfect I didn't want to top off, so I just bottled about 24, put the rest in a wine box. It really seems like a very expensive bottle of wine after tinkering for awhile. Important to really degass these. The yeast they use is very very lively. Which is why it doesn't make sense that the brix is a little high. But it ended up wonderful.

I've been making wine for Christmas to give away as Christmas gifts for years, and I absolutely love this brand. Comes with instructions, and very easy to follow. I actually modify mine now just a little bit, but if you make it just like it says, you will be very happy! Of course, don't expect $75 bottles of wine, but certainly much better than a $3 bottle, which is about what it will cost you to make. Just make sure you follow the directions, make sure everything is clean, and you will be very happy with the outcome! Don't rush it.

We ordered this for my dad's 60th birthday, and it was a great addition!The fabric was a little hard to stick to regular tape, but nothing duct tape couldn't fix!Adds a fun and interesting touch to a big birthday party!

Makes a really good wine will be ordering another.
