convenient cold-thickener, possible egg substitute for vegan cake
Thickens cold with a minute of spoon-stirring. I've had some success with initial experiments combining this with carrageenan as a substitute for egg in vegan cake (my own recipes, a chocolate one and a pumpkin one).

Really nice for thickening fruit mousse in combination with xanthan gum and 0.2% agar
