Will make you wonder why your fridge stinks
The smell is stronger than the taste.Very Mild taste.It feels like a quality product but it's quite mid.I'm originally from Sardinia and have a good understanding of handmade cheese and Italian cheese.This sadly doesn't hit the mark for me.I'd advise to hermetically seal it - its smell in the fridge is STRONG.

Creamy with slight tang
I tend to use this when I fancy a Brie and bacon sandwich. Spread your bread on one side with mayo the other side with sweet chilli relish - be generous with both. On the mayo side arrange fresh rocket, watercress or lambs lettuce whilst cooking your favourite bacon. Slice the Brie to pound coin thickness and place on relish side. When your bacon is cooked you can either use the residual heat to soften the Brie in the sandwich or lightly melt the cheese first under the grill. It’s up to you, it’s your choice. Or let the bacon cool completely and use that way not melting the cheese at all. Either way, it’s a lush sandwich made yummy using castello.
