If you are looking for a reputable seller of quality Japanese cutlery, your search is over. I've been a long time buyer of JCK knives, which were shipped directly from Japan, and was always impressed with the quality and the selection. I was happy to see they are working with Amazon now to make the delivery a bit more convenient, as it saves me the trip to the post office to get the EMS package.Regarding the knife itself. I was looking to replace an almost fifteen-year-old carbon knife (also bought from JCK) that has started to wear down after regular use and sharpening. This was my first CabroNext knife and I was not disappointed. This is a great choice for those looking for something on a lighter side. The edge retention is amazing. Even though it is technically carbon steel, it has not developed much patina in almost a month. This being the ES (Extra Sharp) version, it comes out the box ready to slice paper-thin tomato slivers.Overall, very happy with the purchase and highly recommend to anyone.
