From La T's connoisseur's line of Balsamic Vinegar of Modena, this vinegar is produced from a select must, mostly taken from highly sought after Trebbiano grapes, that produces a balsamico less sweet and more sour than their everyday line. Antica Trama Scura is made from a blend of 70% cooked must and 30% red wine vinegar. The mixture is left to blend in wood barrels for over two months, according to IGP specification.This balsamic vinegar is characterized by irresistible aromas of cocoa and sour cherry. On the palate it is quite syrupy and pleasant. It is recommended for use as a condiment for dishes based on fish, meat and vegetables. It is also excellent drizzled over fresh strawberries to create a gourmet dessert.La T, short for Acetaia La Tradizione, is a cooperative of artisans who produce Balsamic Vinegar of Modena using techniques and recipes handed down from father to son. The cooperative was established in 2001 by an initial 14 members eager to create a structure that would be able to promote and distribute Balsamic Vinegar of Modena throughout the world. The current membership of 25 producers focuses on making of both Tradizionale DOP Balsamico and the more everyday IGP variety.
