Merken is a traditional Chilean seasoning created by the indigenous Mapuche people. The local version is made from Goat's Horn Chile (aji cacho de cabra), which is mildly spicy and smoky, but not nearly as strong as chipotle chiles are. That chile isn't available commercially in the US so, to achieve the correct flavor profile, we use a combination of chiles and smoked paprika. Use as a rub to flavor meats and vegetables. Try it in non-traditional applications by sprinkling on pizza, popcorn, or baked potatoes, or even to flavor drinks like bloody marys, pisco sours, and micheladas. Great for making traditional dishes like Pebre y Chancho en Piedra (Chilean salsa) and Chacarero or Lomito sandwiches.
