It's the same stuff used to make clothing worn by the US military. It's a ripstop fabric that's made from 65% polyester and 35% cotton. The fabric is coated with a Durable Water-Resistant (DWR) coating, which means that water, coffee/etc. rolls right off of the surface of the shorts. The shorts are based on a gusseted crotch construction - which means that they're easy to move in - and have an expandable, invisible waistband that gives you four inches of expansion room in the waist.
