Q: With the blades being "micro-serrated" does this mean they cannot be sharpened?

Hello, These scissors can be sharpened but is recommended to be done by a sharpener who specializes in scissors and not just with knife. Typically scissor sharpening is completely different than knife-sharpening as it requires a curved sharpening surface rather than a flat sharpening surface for knives. Yoshihiro Cutlery

The "HAYATE YOSHIHIRO" website says it's "made in Japan". If this is true, then it's made in Japan; else it's not made in Japan. Could it be China? Korea? U.S.A.?

Q: Will these cut through a chicken or cut up beef?

Hello, Yes, these would be able to cut through chicken and beef. However, we would suggest avoid trying to cut through larger bones and instead go along through the joints or parts that aren't as tough. Additionally bones become much more brittle and harder when cooked so we would also recommend avoiding cooked bones. Yoshihiro Cutlery
