Decent knife
Bought it as a replacement for my 10 Euro knife that I manage to broke. Previous knife made in China, bought in France... Decent sharpness for this one out of the box, though not something to write home about. Nice logos, nice blade, handling is balanced, full tang very useful, protection for fingers is there, I would have liked it to have a more open angle, but fine. Did not like the materials chosen for handle, seems cheaper than my previous 10 Euro blade, and came with some marks on it, but the assembly is very good, seems well put together. I was hoping for something heavier, if you like light blades then this is good for you. As said, the knife is balanced and light but the handle seems a tad too thin, and the square section not exactly my cup of tea in terms of handling. Cut some onion as a test, not big difference vs my previous supermarket-bought 10 euro blade but then, it can be sharpened to taste. This knife might prove good stuff but I still need a heftier knife so back shopping again.

If you love to cook you need this knife
This is the final knife I have bought in the quest to replace my knife set which have lasted 30 years and I have only replace because the wooden handles spilit. I love Sabatier knives. They are not only functional but each one is a work of art. I now, finally have a new full set.

V sharp and have the cuts to prove it
Brilliant knife - made me realise how blunt all our other knives are. On first use, I cut myself 2 or 3 times - testament to a v sharp knife in my book! Excellent quality and sturdy too. Recommended

The professionals choice
What's to say the tool of choice for generations of professional chefs, Sabatier can't be bettered for quality of handling, sharpness and longevity.

Stains after the first wash
The knife itself looks good if it weren't for the fact that after the second washing in the dishwasher (on the box it is indicated as dishwasher-safe) some spots like rust appeared (I don't know exactly what they are) that do not go away
