Not as light roasted as I expected
I expected these beans to be truly light roasted. However, these beans are not so lightly roasted but close to medium roasted. I can tell the difference right after I got the beans and grind them by hand. Light roasted beans are typically difficult to grind. But these beans are too easy to grind as their internal structure already got destroyed by excessive roasting. In my opinion, if you roast a Yirgacheffe close to a medium degree, you just destroy its unique floral aroma and refreshing acidity. If you expected light but close to medium roasted beans, these beans are not bad. But for a truly light roasted bean lover in favor of fresh acidity, you will want to have a better option.

Good Coffee
It tasted good but was not distinctive enough to warrant the premium price.

From one coffee snob to another!
The Ethiopian Yirgacheffe is a mellow easy to drink coffee. Clearly a super fresh roast as it frothed up heavily during the bloom. I went with a 1 to 15 ratio on my Kalita wave pour over. A bit on the darker side of a medium roast. It’s so smooth and well rounded that tomorrow I’m thinking about switching to a metal mesh filter over paper to bring out more of the acidity. I noticed mostly chocolate and floral notes, almost no citrus notes so if fruity is not your thing I can highly recommend this Ethiopian. This is an exceptional value as I tend to pay at least 50% more for what I typically buy. Will be trying others from this company!

Smells Amazing
Smells and tastes amazing. You can smell the coffee through the bag and this ish is fresh. Came very quickly. I'm the only one drinking coffee in my household so this will last me a good while. Ethiopian coffees are my absolute favorite and this one definitely hold up to that. They tend to have a richer smooth taste (I make mine in a french press. I grind in small batches in a spice grinder because it tastes the best when freshly ground. I put enough grinds to cover the bottom of the press and then fill with water. The coffee should never be dark black but like a strongly brewed black tea). Definitely worth a try!
