Flower of salt is the thin layer of fine salt flakes similar to flower petals rising to the surface of the salt pan. It can only form under specific weather conditions and is hand-harvested early in the morning and late in the evening when the wind abates. Located at the crossroads of four national parks, in a pristine lagoon on Croatia's coast, Solana Nin is one of the oldest open-pan salt in Europe, dating back to Roman times. The rich flavor of flower of salt is not comparable to any regular table salt: often referred to as "the caviar of salts", it's an exclusive product that sparks up even the most ordinary dish without altering its original characteristics.
