Very easy to use
I just used this pressure cooker for the first time to cook a pot roast and it is very easy to use. It operates, for the most part, just like any other stove top pressure cooker with a few differences. With most older traditional cookers, you have a jiggle top that rocks gently back and forth while cooking, with the cooker making a hissing sound as pressure is periodically released during the process. With the Fissler Vitavit, you have a pressure gauge that uses a "traffic light design". This means that as pressure builds within the pot, you see the pressure gauge first display a yellow line. Then as the pressure continues to build, the green line will appear, which means that the optimal amount of pressure has been obtained. This is when you want to lower the stove burner to medium low to low heat. If the red line appears on the pressure gauge, then the pressure has gone beyond normal limits and the temperature of the burner needs to be lowered. At this time, you may hear some slight hissing as the gauge is releases some of the excess pressure. Once the heat is lowered, this slight hissing will dissipate and the gauge will again display the green line. For the most part the cooker remains silent. I have found that I need to use a much lower heat setting than with the traditional style pressure cookers. Pressure release may be Implemented using one of four method; quick release via the release button on the handle, quick release by turning the pressure gauge to the release setting, cold water release, or just let the pressure reduce naturally. I have also found that cooking times with the Fissler seem to be somewhat shorter. The pot roast was fully cooked and tender within 40 minutes versus 50 to 60 minutes in the in the traditional cooker.Cleaning the cooker is an absolute breeze as the lid disassembles with great ease, allowing for thorough cleaning of each part. The pot itself is sturdy and hefty. I cooked the roast without a rack and experienced no sticking whatsoever. The Fissler Vitavit is a great deal more expensive than the traditional, old style cookers, but the build quality is clearly superior. Remember the old saying, "you get what you pay for".I highly recommend the Fissler. I have been using stove top pressure cookers for over 35 years and can say that this is the best one that I have ever used.
