Q: What is the v shaped metal object in the installation package for?

This had me stumped too. But I think it's to tighten the faucet glass piece. The "nut" has two holes in it that fit the v shaped metal piece. You essentially use it as a wrench.

Q: Which countertop can I use for this and where did you purchase it?

My husband made a custom one for our bathroom out of solid surface, but you can use about any countertop.
