Q: Hi, I'm looking for green and fruity with even with sediment

Hi Sharon and thank you for your interest in our products. This olive oil is harvested in November every year, so it is considered an Early harvest and is cold-extracted which tends to have a more green-gold character. Obviously the closer it is to its harvest date the greener character it has. Our olive oils are all filtered so you shouldn't look for sentiment. The filtering process helps olive oil to maintain stability and preserve their healthy qualities. Unfiltered olive oils include olive particles that will continue to ferment in the bottle and the sediment on the bottom of the bottle will accelerate the oxidation of the olive oil once the container has been opened. Q: Is this raw oilive oil and not heated and filtered?

I don´t know about your specific question, but I learned that olive oil may not be the super healthy food the olive oil industry tries to make you believe. The Greek and Italian people may have lived long ages, because they were eating simple whole food. Longevity may have been despite olive oil.

Q: is there a use by date

I've no idea. I use olive oil for all my cooking as well as dipping and vinaigrettes so didn't have it long enough to find out..

Q: How strong is the flavour? Mild, medium or bitter ish taste?

Mild at first but then lingering taste in back of mouth (this is from a neat shot!)
