I have to say I have tried all of their bottargas and have enjoyed all of them. They all have arrived quickly and in good condition. In their direct shipments, they have the nice added touch of including a personalized note thanking you for your purchase.After trying them I have found my preferences, but still recommend all of them. I am fairly new to bottarga and have not travelled and sampled in all of their places of origin, so I am hardly an expert, but I have found my favorities for varying reasons.My favorite is the Sardinian. It has great flavor, texture and freshness. This is closely followed by the Egyption bottarga. They both have great flavor. In fairness I have only tried the Egyptian bottarga once. It had a nice flavor and texture. It seemed slighky softer than the Sardinian bottarge and almost seemed to have a hint of a smoke taste. I will give the nod to the Sardinian partially because of price, but they are both great in my opinion.The French/Tunisian would be my next choce. There really didn't seem to be enough differentian in flavor between this and the Sardinian to justify the higher price to me, so the vote again goes to the Sardinian.The Brazilian bottarga was very tasty but it had a somewhat drier texture compared to the others. It is also pricier, so again the nod goes to the Sardinian bottarga.I found the Greek bottarga with a drier texture and a very mild flavor, maybe too mild for my taste. If you like a milder bottarga, this would be perfect for you.

Delicious, expensive, but used in very small quantities.
This stuff is delicious when grated over a bowl of pasta, a bowl of soup, or even over a dip. The quantities used are minor, given how intense the flavor is. (I’m sure that there are uses which don’t treat it as a sort of seasoning, and for which the quantities, and therefore the costs, might be significant. That’s not how I use it, however.) I like that the wax which preserves the product’s quality is pure edible beeswax, and that one doesn’t have to worry if a small amount gets into the final dish.
