Delicious!
This flour looked a bit strange to me at first. It had a much more "corn-y" smell to it, and I wasn't sure how it was going to taste, but I mixed it with some other flours in the pancakes I was making, and they tasted like they had blueberries in them (even though they didn't). They were really good, and I'm going to try more of it next time. It's not the same as your normal flour—it actually looks and smells like it could have been a grain once. It's a more coarse grind.

Great Blue Corn Meal!
I've been looking for a good stone ground blue cornmeal for a long time in local health food stores, and not found it. Mahalo Amazon for carrying this product! It was great in my buckwheat blue cornmeal WW pancakes - not too fine nor too coarse, and yet light enough to rise beautifully! It should be great in cornbread too. I double bag mine and store it in the freezer. Kudos and mahalo for such a great product, War Eagle Mill!

Uniquely colorful results!
Delicious fluffy cornmeal, made beautiful light purple polenta. Cooked up just like standard yellow cornmeal polenta(4 cups water to 1 cup cornmeal with 1tsp sea salt, whisk in cornmeal once salted water boils, then stir for 20 minutes over low heat, stir in 2 TBSP butter at 10 minutes, add 1 cup shredded mozzarella at 15 minutes, still stirring, then add 1/2 cup grated parmesan at 20 minutes, stir in and turn off heat. Delicious served with sauteed veggies or meat sauce, leftovers can be chilled down into polenta sticks and are excellent when brushed with herb butter and pan fried. a great side dish the next day.

Great taste
The flavor and texture were both better than I'd expected. I'd eaten blue corn tortillas at Santa Fe restaurants, but hadn't ventured to make anything myself. I tried cornbread, and decided I couldn't have yellow or white cornbread again! I just wish the price was a little lower, but it is true that you get what you pay for.

I lived in New Mexico for many years & love all things blue corn
I lived in New Mexico for many years & love all things blue corn. I made blue cornbread with this meal to go with a pot of vegetarian chili. I used the Bob's Red Mill recipe, substituting the sugar for honey & I added a pinch of salt. There is NO flour in this bread, pure cornmeal. The cornmeal is coarse ground which turned out to be a good thing. The results were amazing! Truly the best blue cornbread I've ever had. I was surprised to find out War Eagle Mill is located in Arkasas! Great, great product. I'd highly recommend.

Exactly what I was looking for and it’s a great product.
We had some blue corn waffles at Harry’s Road House in Santa Fe. Bought their cookbook and made them at home. They are awesome and I highly recommend them and the War Eagle Mills Blue Corn meal. As the photo shows, I had to eat half of mine before I remembered to take a photo.

Blue Cornbread
This makes excellent blue cornbread! What it doesn’t make is api Morada, or chi cha morada. It’s too gritty and won’t incorporate no matter what you do.
