What is matcha? Matcha is made from Japanese green tea leaves (Sencha) that are stone-ground into a fine tea powder. Before processing, the tea plants are shade-grown for about three weeks, and the veins are removed. Matcha green tea is made by mixing 1/2 to 1 tsp of matcha powder (sifted for best results) with 2 to 3 oz. of near boiling water. The mix is then traditionally blended with a bamboo whisk (Chasen) in a "M" or "W" motion until the surface is frothy. More water may be added to adjust for desired taste.
