Pu-erh is one of the very few teas whose taste, like that of quality wine, improves with age. In fact, many tea connoisseurs purchase the tea and store it for many years before actual consumption. Pu-erh tea comes in two basic types: 1) the raw variety; and 2) the ripe variety. Raw Pu-erh tea is allowed to age and ferment naturally in optimum environmental conditions, sometimes for 15-25 years before the tea is drunk. Ripe Pu-erh, on the other hand, undergoes an accelerated "fermentation process" whereby the tea attains some of the same flavorful and mild taste attributes in a matter of months. This is a "ripe Pu-erh from a 2004 mixed harvest from Xishuanbanna Prefecture in Yunnan Province. Broken from tea cakes, these tea leaves have been aging in Kunming Yunnan. After almost a decade of aging, the word to describe this tea is delicious – clean, savory and sweet.
