Good knife
Knife is sharp, very easy to use, and easy to sharpen and since this knife is carbon steel it will rust.

One day used some water spots stick in the knife.looks like rust.

Not hand forged obviously, but still great value. Definitely high carbon steel. Would generally recommend the 240mm one over this one for a beginner sushi chef. Great flex and edge retention. This knife is also impossibly light, only slightly more than half the weight of the kikiuchi cutlery sujihiki of the same style. The only reason I gave it a four out of five is for the lack of information in the listing. Offhandedly, I would have liked to know what specific kind of high carbon steel it was made from, and the angle of the bevel. Lastly, it's very difficult to find a wood saya for sujihiki 210mm, the saya i'm using is for a 240mm suji.

Sharp slicing knife
The knife is extremely sharp right out of the box. Removing the skin off of salmon has never been easier. Only complaint is that it’s extremely lightweight. I know light weight for a fillet knife is generally a good thing but this one feels too light. Overall a good knife though.
