Clean cuts
I bought these to make fondant roses for my boss' retirement party. The first time I had the fondant too thick. The stencils cut through it perfectly but the rose petals looked too lumpy. Once I got my thickness right, they turned out beautifully. They were easy to use and easy to clean and I did not have any problems with the fondant sticking to them.

Marginally useful
You can make roses with these things, and you can view many tutorials which show you how. I just find that making roses by hand is easier. I have only tried this with fondant though, not gumpaste. I have other rose cutters that I use more often.
