Q: How are these to see on a dress?

They should be fine. The stones are sparkly and lightweight. They should be perfect for a dress except a very thin fabric like chiffon.

Q: Can I straight pin them onto styrofoam?

No. The hole goes horizontally along the bottom of the stone. You could use wire however, push it through then bend the two ends down, then into the styrofoam.
