Absolutely perfect for panettone traditional style
I made already over 18 panettone using this mold and it is absolutely perfect. I really recommend! My recipe is very traditional Italian process and if you follow it correctly you will have the best panettone of your life made at home. I’ll definitely have panettone at home all year long, no need to wait the holiday season anymore.I prove the dough directly on the mold and bake. After baking you need to stab it with a skewer and hang upside down for avoiding the dough to collapse. This is the regular process.Also note: the large mold is perfect for 1Kg of dough.

Real Panettone NEEDS these paper molds
The only possible way to make a Panettone that is like a REAL panettone.The recipe is hard enough that once it is done, you don't want to fight with it to come out of some pan, these are perfect and ready to package and gift (or slice and eat if you're in a hurry like me).Also the original panettone recipe requires the bread to be poked through the bottom with a knitting needle (or the professional Panettone inverter, if your kitchen is sofisticated) and left upside down so that the moisture redistributes evenly throught the warm bread. With these molds it is possible to do so, while you can't really poke through a pan-mold, and it is risky to do this procedure without anything to 'contain' the bread so it doesn't break in half.If you want to make real Panettone YOU NEED THESE, there's no shortcut(Italian chick talking, can you tell:P ?)
