Buy these! These Tri-tips are awesome; juicy, tender, and flavorful; they soak up your seasoning!
Although I bought these with the intention of doing a Santa Maria Style Barbecue, the oppressive New Orleans summer heat forced me to cook some of them in the oven. I’ve used three different methods of seasoning, a liquid marinade (lazy), and two, very different rub formulas - one a hasty and lazy salt, pepper, and whatever else was handy, and the other, an elaborate mixture of a nice variety of seasonings. Each version came out well seasoned with only the lazy-rub-version needing the addition of post-cooking salt. It turns that you can do no wrong in seasoning these cuts (or, at least, I haven’t, yet).I bought six; I’ve got three left. They’re goin’ on the grill, one at a time; I’m still experimenting. Y’all should, too!
