Get this book just for the seitan recipe
This seitan is the only one I have made that isnt spongy and gross. I've used the basic recipe to make a vegan turkey & a vegan ham and both were stars along side the meat dishes my family ate. Some of the meat eaters even opted for seconds of the vegan dish instead of the meat. I found this book more helpful for staples than actual meals but that's just my personal taste preferences.

A great collection of recipes
Since I love “Aquafaba” also by Zsu Dever, I decided to give this book a try as well. I’m so glad I did! I have only had the book a few days and have so far made four recipes, all of which we loved and I plan to make again and again. I now have great expectations for the rest of the recipes in the book! The first two recipes I tried were the Tex-Mex Migas and the Salsa Fresca. This was a delicious Mexican style tofu scramble, which I served in a tortilla as a breakfast burrito. The salsa was perfect - better than any salsa fresca I have bought before, and the Migas was so simple and delicious with a great eggy and cheesy flavor. Next I made the Tempeh No-Tuna Salad Sandwiches. I have made many versions of tuna salad where chickpeas were the stand-in for tuna, but loved this tempeh variation even more. The tempeh is infused with a fishy flavor from seaweed flakes, and the resulting flavor is just right. Finally, I tried the Fudge Brownies. These rival any brownie recipe I have tried, and I do a LOT of baking. With the success I have had with four out of four recipes from this gem of a book, I do not hesitate to recommend it to anyone - vegan or not, experienced cook or not. They truly are “everyday” recipes with easy to follow instructions and easy to find ingredients, that are full of great flavor.

I'm giving this 4 out of 5 right now because I've only done about 30% of the recipes, but those I've done are quite good! The book is well written & easy to follow.

Best vegan cookbook yet
i am just transitioning into vegan foods and it hasnt been easy getting my family to try these foods.....they have to taste good and look good and many fall short....but i bought this cookbook because it says that this is the real foods that vegans eat......it has lots of really good recipes....i've made several of them and they are all good so far.....there are alot of vegan cookbooks out there but many of them have very fancy foods.....foods that i wouldn't normally eat.....the meals and dishes in this book are easy to make - taste like real food and my family has been happy with everything i've made so far.....i very rarely post a review on a product but this cookbook is that good...

My family has enjoyed everything I've tried in Everyday Vegan Eats
My family has enjoyed everything I've tried in Everyday Vegan Eats. There's a nice mix of down-home and international dishes. Though my husband and kids (all teenagers) aren't sold on the idea of going vegan, they like Zsu Dever's recipes. And I haven't had to search for all kinds of crazy ingredients. I bought some tender soy curls so I could make the Lima Bean Bake and the Tator Tot Casserole. I was glad I did; both dishes were addictive. We also especially like the Easy Falafel Sandwiches, which I serve as a salad, without the pita. There are lots of great recipes in this book.

I did not like the recipes in this book
I did not like the recipes in this book. It wasn't compatible with my palate, I suppose.I am going to sell it back to Amazon as I can't return it at this point.

Tasty, easy to follow, and truly everyday foods...
This is quickly becoming my favorite vegan cookbook. The recipes are tasty and pictures are included to help you visualize what you are creating. I've tried the Simple Seitan Cutlets prepared as Country-Fried Seitan, Broccoli Cheese Soup, Braised Brussels Sprouts, and Chickpeas & Dumplings and find them all to be easy to follow. The Green Bean Casserole with Homemade Fried Onions sounds great for my holiday meal. AND the Savory Broth Mix is the perfect blend of seasonings for several of the recipes. Looking forward to trying more from this great book.

Hope you like vegan mayo
I was really not impressed with all the recipes containing either vegan mayo, vegan cream cheese or other processed food. This book is a hard pass for me.
