Good pig roaster with a few issues.
The media could not be loaded. Ok. Been smoking and grilling for 20+.I have cooked 4-5 pigs on the La Caja China.Decent cooker. No smoke flavor unless you add a smoke tube. Used 50lbs of charcoal per cook.This unit.Pros:-Cooked a 55 lb pig in 8 hours using 30lbs of charcoal.- decent construction quality for the money.- motor and accessories of good quality.- cooked a fantastically flavorful juicy pig on the first attempt.- propane and gas.- people loved to see a rotating pig on a spit.Cons:- infrared propane heat is too direct. Even on low it will burn your food before it is done internally. I cooked two shoulders before I cooked my pig. It is best to cook low and slow with charcoal. Get your desired temp. Then turn on the infrared to crisp it up.I would recommend the company add a diffuser to block the infrared direct heat.- $1500 for the grill and the. Counter weight didn’t come with it.
