Works perfectly if you follow the steps
I've only used one of the molds so far but the chocolates fell out when I went to demold them (that's the ultimate goal here).Step one is KEY, clean your mold. I used vodka but you can use other alcohol or lemon extract or just a cotton ball/microfibre cloth on its own, make sure the mold is clean and dry then put a little alcohol/extract on the cloth (or skip this step) and buff the cavities, if there is any moisture left, go back over with a dry cloth, you want to remove water spots and finger prints to give you a perfect shiny finish on your chocolates. (Water is the enemy in chocolate making, it will ruin your hard work at any stage that it enters the process)Temperature is KEY too, make sure the mold isn't too hot or too cold when you pour your chocolate in, mine was room temp (I didn't use a thermometer to check, I just knew my room wasn't too hot or too cold)Temper the chocolate, it's a bit of work but super easy to do and gives a great shine and snap to the finished product).I used coloured cocoa butter in my molds, wasn't a huge fan of the silver on these, I put it on too thick so you see the yellow of the cocoa butter but I'm new to this so it's trial and error.Scrape the top once your chocolate is in, Brittnee Kay has a good video on you tube ( no affiliate, I just found her videos to be helpful as I'm new to this).Put your completed chocolate in the fridge for at least 15 mins to set, I found longer is good too, I left mine for about two hours because I was busy with other things, took them out, turned the mold over and they dropped out without any need to bang it on table to release them, it's an oddly satisfying moment.I've missed out a few steps in the overall process, the above are just the ones that made a difference when using the molds, I see people reviewing polycarbonate molds saying they don't work or chocolates won't come out, they do if used properly, I love useing these and cannot wait to use the others.
