Great Value in a 10" Chef's Knife
Very sharp, great feel and handling. Also very beautiful and a great value. Handling of a knife is very personal, but if you're looking for a 10" chef's knife this is definitely worth considering. We were looking to replace our favorite kitchen knife, a 40+ year old 10" Sword and Shield. After all those years of daily use it had lost it's curvature and no longer cut quite right. I couldn't really tell from the pictures how any knives would compare to what we were accustomed to, but eventually settled on this and one other to try. Except that the other, slightly more expensive other chef's knife is noticeable sharper and works slightly better for every cutting task we've tried, I would probably say this was a more than adequate replacement for our old knife. But as it is, I just can't give it the highest marks. Nevertheless, it will have a place of honor in our kitchen and since my wife and I often cook together, it will get extensive use.

Cuts like butter
I'm a head chef at a popular restaurant, and my knives are used and worn down a lot. However this knife stays just as sharp as when I bought it. It cuts through everything, and I mean literally all food items with smoothness and ease. This knife has also not rusted at all either. It's very sturdy and heavy duty without being too tough on the hands and being easy to handle. I highly recommend to anyone who enjoys cooking or works in the restaurant industry.

Beauty and Function come together
When I first opened the box the knife was in I was rather shocked.I didn't really care so much how a Chef's Knife looked as I was only interested in how well it cut. My Chicago knife has been working well for years. This Sunlong knife looked interesting and I thought why not give it a try. Maybe it will cut as well as my Chicago knife then I can have two.Sunlong knife was delivered in about 3 days. Inside the shipping box was a black box holding the knife. When I opened the box, I was immediately struck by it's appearance. Impressive - it was beautiful. I peeled off the plastic protective wrapper and looked at the knife's blade. You could easily see the multiple Damascus steel layers exposed by the grinding and sharpening process. Coupled with the wood handle, the knife was very attractive. But, how would it work?I was trained to hold the Chef's knife with thumb and three fingers around the handle and the index finger on top of the blade. The knife balance is important in that configuration and this Sunlong knife balanced perfectly in my hand. There was just enough pressure on the heel of my hand to keep the knife exactly in place while being used. This was a definite benefit over some lesser quality knives with insufficient blade weight.The business end of this knife has been amazing. Delivered from the factory, the blade is exquisitely sharp. My first test was on a Pork Loin Roast and my slices were uniform, thin, and easily made. The knife slid through the pork with just the slightest pressure. Slicing vegetables and tomatoes was effortless also. The very sharp blade and correct balance made the slicing easy.Unlike some lower quality knives, the blade on this Sunlong was quite rigid. There was no lateral give or wobble which helped with accurate slicing. I am excited to try this knife on a large ham or turkey as I'm confident it will slice easily and not wander.I learned to be careful though in cleaning this knife. I use a folded over sponge to wash both sides of the blade and handle. With this knife however, the slightest drag of the sponge against the blade resulted in a severed sponge. Cleaning this blade now requires long horizontal strokes from hilt to tip making sure the sponge does not draw across the blade. Rather than air drying the knife after washing, I used the supplied micro-fiber cloth to dry the blade and handle. (You can see cloth and blade in attached photo.)Sunlong does not supply a sheath for this blade so this knife did not go into my knife drawer for storage. Sunlong sent the knife in a sturdy foam-filled box with a cutout for the knife and drying cloth. I have not yet found a good place to keep the knife (neither the butcher block on the counter nor the loose knife drawer are suitable). For now, the black box holding this knife lives near the end of the main cooking counter. The box holding the knife is about 16" long, 4" wide, and 2" high so think about where this will live in your kitchen.Bottom line: This Sunlong 8" Damascus steel Chef's Knife is excellent in both appearance and function. This has replaced my Chicago knife as my first-choice Chef's Knife for food preparation. It is definitely worth the money and is a great value.

Amazing knife
Love this knife for several reasons. It holds an edge like no knife I have ever used. It slices like no chef knife I have ever used.The negative part is it is heavy. VERY heavy. Surprised me how it feels in the hand. Sort of awkward a bit in the handle and one needs to have good hands to use it well. Arthritis doesn't make it easy to use.One issue I have is that I am a bit afraid to use a honer on it. I don't want to damage the razor sharp blade, though that is the point I guess. It cuts through meat like butter, but has slowed down the process as the sharpness have begun to fail. Not being sure how to protect the edge I have held off using the honer on it.

Taglio ok
A distanza di quasi sei mesi dall uso posso dirmi soddisfatto. Ovviamente la damascatura dell acciaio é più estetica che altro. Rifilato dopo 3 mesi, come nuovo.

Nulla a che vedere con gli stupendi coltelli giapponesi
Considerato il prezzo e la sua presentazione, pensavo si trattasse di un coltello fabbricato in Giappone con la particolare tecnica di lavorazione multistrato, invece la sua produzione non è così accurata e molto probabilmente non è nemmeno uscito da una fabbrica giapponese.....speriamo non perda subito il filo.
