Blue Smoke! if you don't see it, or at least a very clear smoke you're not getting the right smoke flavour on your food. White smoke is bad, this will give your food a bitter taste and this is often the case in the UK due to high moister content wood being sold, the chunk doesn't ignite fully and you get a smouldering effect, especially on ceramic cookers where we purposely shut the airflow to the fire down to maintain low and slow temperatures. We feel we have solved this problem with these mini chunks, they are very dry and small, to suit your small fire, simply distribute 3-5 throughout your coal bed and watch the blue smoke roll as they fully ignite and no more do you get a bitter end product, this will really take your food taste profile to the next level.
