Escoffier, 2nd Edition

The definitive culinary bible.
Good big heavy quality book printed on quality paper with a nice feel to it. Font clear and easy to read. Thousands of recipes from the king of chefs in the definitive culinary bible. This is addictive if you are interested in the French classics - and it just goes on and on. There are no pictures - this is a serious book written for professional chefs. It is also a little bit too good to take into the kitchen as a recipe book. I would recommend:1. Stocks, Sauces and Garnishes (Escoffier Kitchen Handbooks)2. Hors d'Oeuvre (Escoffier kitchen handbooks)3. Illustrated Escoffier: Classic Recipes from "Le Guide Culinaire"These are all available second hand for pennies and present many of the recipes, with pictures and updated text. These are the "expendable" books I have been testing out with in the kitchen, whilst the "Guide Culinaire" is for reading in the lounge to broaden my cooking horizons.

The bible for chefs
If you enjoy cooking or even if you enjoy food, this is a reference book that must be on your shelf. Not a cook book as such, and in fact it can be a little daunting to find what you need quickly - but that misses the point of this staggeringly important body of work. What it is is a record of thousands of classic techniques, recipes, sauces, you name it from possibly the greatest chefs to have lived. You will find a copy of this on the library shelf of any top chef for the simple reason is - this is THE book.Even if you dont cook, just flicking through it is a total delight. If you like your cookery books with big glossy pictures and photographs of Ainsely or Jamie glaring out at you, this is certainly not for you - but as I say - that really isn't the point

Good book, but arrived damaged on the corners which for a new book of that price is pretty unacceptable

Food will never be quite the same
Having heard about this 'chef's Bible', I decided it was time to see if the fuss was worth it. Have to say it is. My son's the chef, I'm the one with the knives and forks and it's been struggle to decide where to start. Its NOT for beginners, as you do need to know quite a lot of the techniques. But if you do - it truly is an Aladdins cave of delights. meats, fish and the SAUCES.
