Simple To Use And Reliable
I don't read any Japanese. OK, a little here and little there but certainly not enough to read an instructional manual. If you want to corner a Western market, listen up, it helps to print a multilingual manual. Maybe even in English. Duh. So, this little incubator is so simple that I, yes, even I, could make perfect, delicious, nutritious Amazake right on my own kitchen counter. Just push one button. That's it!This little puppy does the rest. Elegant, simple, tasty. No muss, no fuss. Highly recommended.

It's a little small but I thought it would be larger for different projects...my mistake.
I am excited for the fermenter but I should have bought a properly larger fermenter for black garlic, etc.. I am excited to make my first natto from scratch, it's in there and fermenting as I type! I can use this hopefully for black garlic, but I'll seal the garlic in vacuum sealed bags (with a little air), to keep the smell in. If it doesn't work, I'll know :-) I was hoping to proof dough in it as well, but it's rather tiny, like 1 qt total. :( I'll have to translate the instructions on everything with my phone as I didn't ever teach myself kanji.Okay, so it operates from 25° C to 65° C (77° F to 149° F) and for times 8 to 48 hours, which is nice if you're in for a longer ferment. My black garlic worked! Took about four weeks and stank up the plastic, but it still works to make natto, etc. and I'm not noticing any flavor in that. Haven't tried yogurt, because I have an Instant Pot for that setting and my IP is not adjustable on the yogurt ferment temperature, sadly.

Best purchase ever!
I've been using this product to make my brown rice amazake. It performs consistently well. I cook one rice measuring cup of brown rice plus 5 rice measuring cups of water in my rice cooker at the "porridge" setting, which I then puree in the blender. I mix the puree and 2 rice measuring cups of rice koji in the amazake maker container and let it do its thing at 57 C (celsius) for 10-12 hours (occasionally mixing it). I put the whole container in the fridge as soon as it's done.The instruction booklet tells you to sterilize the container in boiled water between use, but I just wash it in the dishwasher and there hasn't been any problem.I just wish it was a little bigger, so I could make more amazake in one go.
