You can do better.
The concept is simple, put a powerful, high RPM yet compact motor in the palm of your hand, attach to it a blade and you get a nice little tool to mash and crash right in the piping hot pot. Since then the concept is the same but various attachments have been invented to allow the same motor to do more things.So what make an immersion blender perform better than the rest??? Well, many companies quote this or that amount of watts, Bamix/Esge/Zauberstab/Unold are quoting RPM’s but somewhat low watts, what really matters? How can we compare?Well, the correct… answer it’s a bit of both. The RPM times the circumference of the blades would give us the vertical speed of the blades. The higher the vertical speed of the blades, the “better” the crushing capability of the blender will be. In the Bamix range the non pro units go from 10,000 to about 17,000 RPM. The pro units go from 12,000 RPM for the low speed of the Gastro 200 all the way up to 22,000 for the more powerful Gastro 350.How do we compare the Braun and Bosch for instance to the Bamix? Bamix gives us RPM and what seems as low wattage but claim to be better, the rest give us really high wattage ratings, and you really can’t trust the data given by cheap companies.There are many types of comparisons to make. Build quality, crushing ability, attachment variety, attachment quality reliability and much more. So let’s dive into each category and in the end have our conclusions…I’m sorry Bamix fans, I really wanted to like this unit. It’s the best Bamix has to offer but it’s just not that good in any category except hype.Build quality in my opinion is directly connected to reliability, and this is one area the Bamix does earn a few point although customer service seems to be non-existent. So, what you get?? The most basic design, nothing that falls apart, everything sealed, yet cumbersome to handle package. One major problem is that it gets warm, very warm, to a point you can’t handle it cause it’s too hot to hold in your hand. Braun blenders seem to have a bit less for build quality but they also last a very long time.Crushing ability… Now things start to get interesting. Crushing ability comes directly from blade speed and diameter. The Bamix has a diameter of 1.41 Inches for its blades, multiply that by 22,000 for the best and fastest Bamix and you get 92MPH. Just for comparison the Vitamix 5200 blade has a vertical speed of 254MPH to get its job done. After working with quite a few immersion blenders including a few from the Bamix range (Gastro 200 and the 350), I think that at about 17,000 to 18,000 with Bamix blades, things just start to move. I would consider any Bamix that has less than 17,000 RPM as not good enough in this category, and even then, 17,000 is bare minimum IMHO. Gordon Ramsy’s youtube video using the smallest Bamix is no more than a bad joke. So where do the watts come into play you ask? The problem with all those RPM’s is sustaining them in thicker soups and sauces. The more watts you have the higher the ability of the blender to sustain all those RPM’s will be better. The Braun and Bosch have about 14,000 RPM’s, with higher wattage and bigger blades, so in thinner viscosity dishes the Bamix Gastro 350 will have an edge over the competition, but on thicker recipes, where lots of power does the trick, I fear the Braun will beat the Bamix easily.Blades, the second most important item in the immersion blender to do its very basic job. The Bamix has some advantage here since it has what’s called dull blades. The Blentec blenders as well as the higher end Vitamix ones also have that. It means the blender relies on its speed rather than on blade sharpness to tackle its tasks. It pertains mostly to reliability rather than on shear performance. It also has the disks for whipping and blending which work well for specific tasks even on the smaller Bamix.Attachment variety, attachment quality… The Braun, no doubt, has the best variety of attachments. Also the attaching mechanism and pure attachment quality is far superior to most others.So, Bamix Vs Braun, I would say it depends what kind of cook you are. For the purist, the one who needs all the hype, you probably already have a Vitamix or a Blendec, you also have a food processor like MagiMix and a Kitchenaid countertop mixer, I would say the Bamix Gastro 350 is a perfect match. It does the basic tasks nicely, that's about it. As for the rest of us mortals, steer clear from the cheaper Bamix models, and I mean anything less than the Gastro 350, their attachments are not nearly as good as the Braun attachments nor as diversified, nor as powerful.Breville/sage, I will not consider their products until they decide customer service is at least as important as sales. Shame on you Breville.Kitchenaid, Didn’t have actual hands on experience so I will not write anything.Waring, seem to be a combo between industrial quality and home usage. Also, never used them myself so can’t comment.

Warum hab ich den nicht früher gekauft?
Das Gerät ist sein Geld wert! Ich bereue, ihn nicht früher gekauft zu haben. Aber diese 30,- € Mixer taugen dagegen echt nix. Ok, die Mayo ist mir mit diesem Gerät zigmal nicht gelungen, einfach Zuviel Power. Aber mit dem mitgelieferten Multimesser geht es, mit der Quirlscheibe hab ich kein Glück. Auch bei Sahne aufpassen. Die ist sonst ruckzuck Butter. Also ich geb meinen Zauberstab nicht mehr her. Sollte er eines Tages das zeitliche segnen, dann wird sein Nachfolger wieder ein Zauberstab! Auch die Länge des Stabes ist prima. Kürbissuppe direkt im Topf pürieren - kein Problem, man kommt problemlos bis ganz nach unten (ich nutze da immer meinen Dampfdrucktopf), auch Erdbeeren für Marmelade pürieren. Selbst gefrorene Früchte püriert er. Dauert zwar etwas, aber es klappt.

Warum brauche ich noch einen Pürierstab?
Das hat mich meine Frau gefragt, als sie den Zauberstab ausgepackt hat. Bei fast allen anderen Geräten die wir besitzen, ist irgend ein Teil kaputt. Meine Frau kocht oft in einem 14 Liter Topf und der einzige funktionsfähige Pürierstab den wir noch im Einsatz hatten ist so lang, dass man mit der Hand in die Suppe eintauchen muss, will man ihn benutzen. Und wenn etwas in dem Topf ist, das etwas mehr Power benötigt dann hat sich das mit dem kleinen auch erledigt.Der Zauberstab G 350 ist ein professionelles WERKZEUG!!! Da gibt es kein zu heiß, kein zu hart. Für alle Aufgaben, bei denen man einen Stabmixer einsetzt, ist er das adäquate Gerät, ohne Abstriche. Durch die auswechselbaren Messer lässt er sich auch noch gut an die jeweilige Aufgabe anpassen. !!!!! Erst Kabel aus der Steckdose, dann Finger ans Messer !!!!! Gilt eigentlich für alle Geräte, aber bei diesen besonders !!!!Ein super Gerät !
