Looking for wheat noodle replacements and bought these for a specific recipe (Japchae - SO SO good!!) with low expectations but was very pleasantly surprised! They were very easy to cook and absolutely made the dish! Love that they have one single ingredient - sweet potatoes!Worth buying a larger package as you will want to use these in a variety of meals.

I will buy again and again. Best noodles I have ever had. One ingredient: Sweet potatoes. Tastes like a mild wheat flavor, but more flavor than rice noodles. Cooked, looks and feels like thin spaghetti noodle (not Vermicelli small). Easier to make, and less cleanup than wheat noodles: I boil water in my electric kettle, pour over noodles, wait 5-7 minutes, colander drain, rise in cold water (stops over-rehydrating), and mix with whatever hot temp sauces I would use in wheat-noodle meals, or microwave 1-2 mins after adding cold things like butter, olive oil, etc. They = about twice dry size, so one package is comparable to the same amount of wheat pasta. They look so cool: Clear-ish. Note that they are really hard to cut/break when dry (unlike wheat spaghetti pasta). I wait till cooked, drained, and then cut to length desired before adding sauce. I have purchased these many times and the quality has been the same: Excellent. I highly recommend them.

This is a great deal for a large box of these. They are great in stir-fry or with your favorite pasta sauce. I love that they are gluten free and provide another sturdy option for GF people!

I use these noodles for everything. The only ingredient is sweet potato! So there is no gluten or anything bad in them. They don't really have a flavor (which is good) so they can be used in almost any dish, and hold onto the flavors of whatever you add to them.
