Wing nut
I am using my new small Dovetail Maker for dove tails, and yes the wing nuts do protrude, but that is where a fine file is nice to have. I like the knob idea, but a file works great also. You should not need to over tighten the wing nut, because throwing it on the ground should not be an option, or pushing it to items on your bench. I find just lay it down next your work will give you fine repeatable results. I feel the Crown 115MW Adjustable Dovetail Maker is great for dovetails minus one star for a little extra filing.

Works as advertised. But try and replace the wing nut with a knurled brass nut for maximum functionality. Wings were an interfering factor for many orientations and the knurled nut eliminates that frustration. I got mine at Marshalls industrial Hardware for 69 cents
