Q: Can I get extra dowels to reuse the plates? Is it a standard size?

I think you can but might be difficult to remove since they have to be glued on.

Q: How wide is the center hole to put a middle dowel!

I no longer have a set but it was at least 1/2 inch.

Q: How do you go about taking it off to cut the cake?

Well you start cutting the cake from the top, down and once you reach the cake with a base you simply pull it up to remove it.
