The ginger root grates well. It has a fragrant ginger smell which enhances my baked goods.

Needed to restock. This keeps well and I grind what I need in my spice grinder.

Weirdly enough, these seem to be a bit weaker than powdered ginger, which is obviously also dried. I did try to grind a few of these to see if the density made any difference, but it was still a bit weak.It is a bit weak, but it still tastes like ginger. I managed to get some decent flavor out of them by soaking them in some 100 proof vodka. With that (and some time, obviously) I managed to make an extract that is pretty good in a lot of things. I put it in tea, and various juices to give them a kick. It also makes ginger ale better when I make it with my soda maker.So, if you are hoping for the strongest ginger, just go buy fresh. This is fine though.

This whole dried ginger is convenient to keep in my pantry and easy to toss a couple into a batch of soup for flavoring. I always pick out or strain out the ginger before serving, so it’s actually more convenient that the pieces of ginger are large and easy to spot in my pots of soup. I usually use fresh ginger, but the dried ginger seems to work just as well and it’s more convenient since I can have it in my pantry at all times without worrying about it spoiling or going bad.I also like to drink ginger tea when I’m feeling under the weather, and these would work well for that purpose too. I’ve been using fresh ginger for tea as well, but it usually requires my husband to run to the store since we don’t always have fresh ginger on hand!I’ve only used this dried ginger for flavoring, so I can’t speak to the texture if you try to rehydrate or consume these. It works well for flavoring purposes though, and I toss the ginger root before serving or consuming.This is a decent price for a large quantity of fresh ginger that comes in a reusable plastic container. Good to have in the pantry for times when you’re making soup or tea and fresh ginger isn’t available.
