I needed chickpea flour for a recipe. This worked well . The recipe came out great.

Out of the bag it has an odor, but it's not noticeable after cooking. Excellent product.
As a person with a sensitivity to gluten, I'm always looking for products to use in my cooking.I love making dumplings and stuffed pasta such as ravioli.I found a basic recipe that called for chickpea flour and thought I'd try this on my Chinese dumplings.When I opened the package I thought "This isn't going to work at all." due to the odor.After cooking, as much as I tried I could not detect any odor or flavor from the chickpea flour.The dumplings came out great, the dough was "stretchy" enough to allow me to cut, form, fill and seal the dumpling. You can modify it a bit for other types of pasta.150 g Chickpea flour125 g Tapioca starch125 g Sweet rice flour3 or 4 g Xanthan gum (a little more than a teaspoon)1 cup of warm WaterMix the dry ingredients together and add most of the water. Knead for about 5 minutes. The dough should not stick to your hands and should not fall apart when stretched; it should be a bit plastic such as the Play-Doh that you played with as a kid (or still do).You can always add more water if needed (a teaspoon goes a very long way, don't add more than that each time or it'll get too wet).NOTE: Only use SWEET rice flour. Sweet rice flour is what is used to make mochi if you're familiar with that. It is often called mochiko or glutinous rice but that just means it's glue-like, it does not contain gluten. excellent staple for the pantry
use for making my dogs homemade greenies - much cheaper than store bought and I know the ingredients my dogs are ingesting
