In May of 1773, the British Parliament instituted a tax on tea in the US colonies. The colonists were outraged and swore not to drink King George's evil brew. However, tea time was very important to them, and they were not going to go without it. Instead, they created their own tea from "wild" edibles and herbs growing in their garden. They named it "Liberty Tea". We call ours New Hampshire Colonial Tea. The combination of herbs and wild edibles is what people in this area would have used to make their rebellious tea. It's a perfectly delicious combination of raspberry leaf, red clover, peppermint, elderberry and staghorn sumac. The sumac gives it a lemony taste, while the elderberry gives it just a hint of sweet berry flavor. Directions: Pour 1 cup boiling water over 1 tsp. of herb, cover and steep 3-5 minutes. Strain and drink.
