Cablanca (7 ounces) by Gourmet-Food

I just got 3 different goat goudas for taste taesting .. and while all were good this was just delightful .. very full flavored and not goaty full flavor .. this people know how to make cheese.

I use Cablanca Cheese instead of Mozarella when making homemade pizzas. It is delicious, and has the same melting consistency as Mozarella. But most importantly for me, it is Lactose-Free, so I can have pizza again without worry. For the color that I'm used to from the pizzas of my childhood, and for a bit of added flavor, I usually top off the pizza with just a little shredded Beemster Farmer's Cheese or Vlaskaas, but this is optional. A cheese maker at a farmer's market recommended it to me some time ago, and I am forever grateful. It is soft, delicious, and a pleasant surprise to the pallet.

In my opinion, this is the best goat cheese made anywhere in the world. It's firm but not too dry and retains the delicate sweetness of goat's milk. I could eat it three meals a day.
