How to use the steamer rack
Here's how to use the included Milk Street steamer rack for those that don't know how to use it:1. Put the steamer rack into the Milk Street wok and add water to the base of the wok at a level below the rack.2. On top of the steamer rack you need to put one of those bamboo round steamers (they also make stainless steel ones) that you see at the chinese dim sum restaurants.3. Inside the bamboo dumpling steamers, you put in dim sum goodies like pork buns or shrimp shu mei. Put the dumplings on top of paper liners or edible cabbage leaves to prevent sticking to the bamboo base. Keep the top of the bamboo steamer open.4. Cover the wok with the Milk Street glass lid. It will self vent through the hole.5. Turn on the range and bring the water to a boil.6. Then lower it to medium heat and let your dumplings steam for 10 to 12 minutes.7. Shut everything off and let it sit for 3 minutes.8. Remove the bamboo steamer and serve its contents.Enjoy! Out of the box, you need to clean the wok as per instruction. You don't need to pre-season these like with cast iron skillets. You can certainly try to season it a bit to get an improved non-stick surface right away. It's up to you. Over time, a natural non-stick layer will build up from the oil you used from every day cooking.BTW, as another side note, if you've ever cooked fried rice or stir-fried noodleds in a wok, you know that they'll stick if you don't constantly stir them in a healthy base of oil. Don't expect non-stick miracles from any "non-stick" carbon steel woks.

What a great wok!
I'm a huge Milk Street fan & I have also been coveting a carbon steel wok. I was very excited for this to arrive and used it right away. This wok arrived packaged in such a way that it would make an excellent gift. Included in the box with the wok are a glass lid (with a small hole for venting), a steamer rack, and a pamphlet with easy care instructions and a few recipes.Before use, I thoroughly scrubbed and dried the wok as instructed. I then followed the directions for starting to build a nonstick patina. On the first use, this did have some affect in preventing sticking (I made fried rice), but I am very hopeful that this will continue to become more nonstick over time with use and occasional seasoning.The wok is lightweight for its size, but not at all flimsy. I really appreciate that it was designed to be used on any cooking surface. Though I prefer to cook with gas, I currently live in a condo that only allows for an electric stove in the kitchen. This wok was able to heat to the high smoke point of the oil I used while staying balanced on the stovetop, so I didn't have to worry about causing an accident with a hot wok.Overall, I really love it, and I'm looking forward to giving it a lot of use over the years.

WOW, so much better than my old WOK
I already have a WOK which I purchased about 25 years ago. This WOK is so much better. It is larger and thicker and also hammered steel. The quality and appearance are excellent. In use, it has a flat area at the bottom center to allow it to sit flat on a stove top. My old WOK used a small ring to allow the curved bottom to sit flat on a stove top. Because it is larger and thicker, it holds temperature better, and also there is enough space to separate items by pushing things up the side for less cooking heat. Comes with a quality glass cover and steaming rack. Even the box is above average, so will make a great gift. I did watch a few videos about seasoning a new WOK properly. Most I watched seemed overly complicated. I ended up giving mine a good washing, and then heating some oil until the oil smoked for 30 seconds or so. Works great so far. Very happy with this product and look forward to many years of tasty entrees.

Well made wok
I love that this wok is practically ready to use straight out of the box (after a wash of course). It's sides are high enough for stir fry and I love that it comes with a lid. I also love that it comes with a steamer rack and the hand-hold on the the opposite side of the handle (304 stainless steel that stays cool!) makes it easy to carry. I do wish however that the item description was more detailed in terms of it's nonstick properties. It's described as non-stick and indeed the sides are very slick and food does not stick to it. The center flat portion however does not seem as nonstick (fried rice notorious for gumming up pans did the same with this one). The manufacturer states that the "hammered treatment grows more nonstick with use" so I will be seasoning it so that the center portion will be truly non-stick. All in all though this is a good, sturdy wok that should last and I am looking forward to cooking many meals with it.
