After cooking, the sphere swells to almost twice its original size and becomes translucent. Some cooks insist that tapioca pearls must be soaked in cold water before boiling. But this seems counterproductive because the starch starts to dissolve in cold water immediately upon contact and the pearls lose their shape even before they reach the stove. It's the same principle when using tapioca starch in powder form. Add a teaspoon of tapioca starch to room-temperature water and the starch mixes into the water. But drop a teaspoon of tapioca starch into hot water and it will form into a lump. So, unless you're making a pudding with your tapioca pearls, skip the soaking part. Add them to the water only AFTER the water has reached boiling point. Make sure the tapioca pearls boil in plenty of water. Four cups of water for every cup of dried tapioca pearls is a good starting point. More won't hurt but less water is not recommended. Basic Recipe Bring 4 cups of water to a boil. Add 1 cup of tapioca pearls, stir and bring back to the boil. Reduce heat to a simmer and cook, stirring often, until the pearls are translucent. The tapioca pearls never cook all at the same time. Some will still have an opaque centre when most are fully translucent and that is OK. Take the pan off the heat when most of the pearls are translucent. Strain off the water. Finally, rinse the cooked tapioca pearls in cold water and use as your recipe directs.

Real Tapioca
I bought other brands before that didn't match their description and this one did the trick. Perfect Tapioca Pearls. Needs patience when cooking this but worth the wait. Bubble Teas in London cost £4.40 for a regular size with only 3 spoonfulls of Tapioca Pearls so decided to make my own for the whole family with different flavours - a hit! One regular serving costs 50p!!!!

Useless, over charged and only half the order received!
I ordered 2 packs and received 1, despite paying for both. The pearls themselves were poor quality and fell apart when cooked, wish I'd just gone to a local supplier!

Never cook?
So firstly, pretty pricy but I thought hey hopefully it's pretty goodDespite being labelled "bubble tea" and having a bubble tea recipe on the back the things will never actually cook if you follow the directions on the back of the bag. I actually couldn't do this at first because the bag was so poorly made that the letters ran off of the packaging from a steam of boiling water. Seriously. I had to rummage for the order page to find their recipe.So I dutifully follow the recipe and after upward of 2 hours bubbling away it never cooked, so that's over a third of the bag gone and I decided to try a different recipe. This one called for 8 parts water to 1 part tapioca pearls, 15 minutes bubbling and then 15 minutes resting.Both recipes stipulate that the tapioca pearls should "rise to the top." They never do this. Even with stirring they stubbornly cling to the bottom of the pan the minute you stop moving. They have to be babied consistently and *still* never cook.
