Luckily, I don't have any health condition that requires foregoing wheat. I just know that wheat processing today is unhealthy and hard on the gut. So I thought I'd try baking with nut flours and I absolutely love this one. I substituted a regular cookie recipe with half Guidrys and half coconut flour. Play around with it bkz the taste and health benefits is so worth it.

I've bought several products from the Guidry line of organics and have really enjoyed them so I decided to give their pecan meal a try. I first used it to coat chicken breasts that I baked, adding just a little salt and pepper and my husband and I both enjoyed the distinct new taste it provided. Then we tried using it to coat pork chops and then tilapia fish with the same results! Next I'm going to use it in lieu of flour with the banana walnut bread I regularly make.
