Easy Recipes
I’ve never wrote a review about this cookbook, even though I’ve had it since 2018.I have the physical copy & ebook copy.I haven’t made everything in here, but the meatloaf recipe I’ve done plenty of times sans cheese, and it is really cook.I currently have a meatloaf in the oven and I’ve literally just noticed it says to grate onion not diced.Pro tip: read read read!

Delicious Recipes
I love this book. It was to be a Christmas present, but I had to check it out and consequently, it will not be wrapped - still for Christmas, but I felt compelled to make some recipes right away. Meredith is a generous chef, sharing her recipes on QVC, her own webpage and a series of basics on You Tube tutorials. After years of trying to make biscuits, my problems were solved with her recipe and demonstrations. That was what really made me a fan. I purchased "Comfortable In The Kitchen" last year and loved every recipe I tried, so I knew this one would be good. I can say there are maybe two recipes in the whole book that I wouldn't try based on personal tastes. I have made the Kielbasa, Pierogies and Sauerkraut Bake, Panko Crusted Pork Chops with Corn and Zucchini, Carne Asada with Onions and Peppers, Chicken Fricassee with Wild Mushrooms and Spring Vegetables, and the Skillet Chicken Enchilada Rice. All were good, easy enough and done within a reasonable time. Meredith is an excellent teacher and she knows that foods will go together and how to create memorable meals. Bravo!

Satisfied
I have made 4 meals from this cookbook. The instructions are easy to follow. Lots of different spices that added unfamiliar but pleasant tastes. Yes, everything cooks in one pan, pot or appliance but it takes several mixing bowls in several of the recipes, so don't expect less cleanup.

I use it almost every day
I have used this cookbook almost every day since it arrived. The meals are easy to make, do not require any special ingredients, and are very tasty. I hate when recipes call for special ingredients or spices that you either can't find or only use once. This is not the case with this cookbook. Also, I usually halve the recipe so that I don't have too many leftovers and the recipes still turn out great. I love that Meredith shows you several options on how to cook eat meal whether you have a skillet, dutch oven, pressure cooker, slower cooker, or even an air fryer. No fancy equipment is needed or required. I highly recommend purchasing a copy of this cookbook as it has something for everyone.

What a clever concept!
Once again, Chef Meredith, aka The Blue Jean Chef, has released a cookbook that allows the home cook to take advantage of Chef Meredith's sound, professional training and experience, to create simple but delicious family or party meals. The concept for this book is to present appealing one-pot recipes for the stovetop or oven, and then with just a very few tweaks Chef Meredith explains how the "same" dish can be made in a slow cooker, a pressure cooker, or an air fryer giving the home cook numerous cooking method options based on the cook's equipment availalbe.As with her other cookbooks, Chef Meredith's writing style is very clear, professional without being intemidating, and encouraging. I'm glad I added this one to my collection of Chef Meredith's previous cookbooks. It will get lots of use this Fall and Winter.

A great cookbook - lots of EASY recipes
While I am a foodie and like all types of recipes, I am also a mom with little if any extra time, especially on weekdays, so I look for the types of recipes that can be done quick when I need to or if I have time to change up my cooking method. Meredith gives us these options with listing different cooking methods for each recipe. If I have time before work and want to put in crock pot or if I want to come home and throw ingredients into my InstaPot and work on mounds of laundry I can. I didn't see a single recipe my family would not eat which is also a plus and those I've made so far have been thumbs up and keepers per 3 sons & hubby.

I feel just ok
I liked the idea of air fryer recipes but the ones in this book are not for me. I want very simple put togethers and really just one items. The chart in book is helpful but again I think I was expecting something with very few ingredients recipes. One pot or not....

One-pot joy!
Typically in a cookbook, I'll find only a few recipes that I actually make. In One Pot Comfort, MOST of the recipes in the book I've made, over and over again. No "weird" ingredients that you have to make a special trip for..and all great-tasting, and easy to follow directions. Love the fact that you can throw all the ingredients basically into one pan or casserole dish and voila! you've got a meal! A must-have cookbook!

Everything's delicious
Though they're made in one pot, don't be fooled, some of these dishes can get a bit complex. But they're all amazingly delicious. So I'm not sure if I'd trade in for more simplicity to sacrifice the surprising explosions of taste I've had from this book. Also great that most recipes have modifications for air fryer and/or slow cooker, which is exactly what I wanted.

Great for one pot/cooker/fryer cooking
Already had a copy but liked it so much I bought it for a friend. Love that the recipes are written for several cooking methods.
