If you are interested in making your own dumplings this is a good book to fulfill your interest. I have never made dumplings before purchasing this book, but I was able to follow the recipes and now enjoy homemade dumplings on a regular basis.

Questo libro è incredibilmente completo e appassionante. Per me che adoro i ravioloni cinesi, ma non ho attorno ristoranti che li facciano, è aver trovato un piccolo paradiso da realizzare in cucina. L'autore spiega tutto con una passione, una meticolosità e una generosità davvero rare. Troverete tutti i tipi di "ravioli" orientali, si spiegano bene le ragioni dei diversi impasti, dei diversi spessori, e dei tipi con cotture particolari. Nella versione kindle che ho preso, non tutte le ricette hanno la foto, questo è un peccato (non so se la versione cartacea abbia più immagini) ma do comunque 5 stelle perchè questo ricettario è assolutamente stupendo. Lo consiglio a chiunque voglia appassionarsi alle paste ripiene della cucina orientale.

This book is crazy amazing! I'm working my way through it and so far flavours have been spot-on authentic - take it from a Southeast Asian. Instructions are a bit lengthy but incredibly thorough. Shop-bought frozen dumplings are now dead to me.

Ich hab mir mittlerweile gleich noch ein paar Kochbücher gekauft aber keines kommt an das Buch heran. Es ist jetzt nicht jedes Gericht gelungen aber gerade die Rezepte für die "Basics" sind extrem gut, schön erklärt und funktionieren einfach. Es ist weniger eine Rezeptsammlung mit eigenen Ideen als ein gutes Lehrbuch um die verschiedenen Techniken und Arten anhand von Standardrezepten kennenzulernen.Die Dips in diesem Buch finde ich auch deutlich besser als die Varianten in vielen anderen Büchern. Also wenig neues oder innovatives, viel Abwechslung und von den Zutaten her das meiste leicht aufzutreiben. Viele meiner Gäste haben vorher noch gesagt "kenne ich aus Urlauben in Hong Kong, bekommt man hier sicher nicht so hin" und waren danach sehr begeistert.
