The best gluten free flour
You can make a pizza with this gluten free flour that actually tastes good, that people who aren't gluten free will actually want to eat. We use it for everything and really can't wait for it to come to American supermarket shelves.

Gluten free, but not wheat free. Let me explain...
First, I love this flour. As an ongoing quest for decent GF breads and Pizza doughs, this beats all hands-down.And yes, this contains wheat. Gluten Free WHEAT STARCH. So yes, it's gluten-free BUT if you have allergies to wheat (not celiac) then you could experience issues consuming this. Thankfully my family have celiac so we happily gobble down this stuff even when it just comes out of the oven and not waiting to cool.Because of the price, however this becomes more of a treat than making for daily consumption. This 1KG bag has enough for two bread loaves and the 5kg is enough for 10 - your mileage may vary.I cannot say enough about this flour. As anyone who has GF ibn their diet, you know how difficult it is to have soft, fluffy bread and Caputo does it!

Worth it.
Yes, this flour is super expensive. When I bought it at least, it was priced at $5.50 a lb for this 11 lb bag. I never thought I'd say it, but it's worth the price. It produces much better quality than the 1:1 gluten free baking flour options I had tried from my grocery store. Once I realized the cost is about the same as three, small gluten free pizza deliveries, I went ahead, knowing it would pay for itself in the first six cups. The consistency is like corn starch, and I have discovered I can use much less of the Antimo Caputo product than the GF flour I was using before, for the same recipe. There are no "off" flavors and no gritty texture. The pizza dough actually rises, unlike flours I've tried before, which come out of the oven like dense clay. I also made pancakes that the family swears tasted like "the real thing." Looking forward to baking a loaf of bread.

The best gluten free flour
This flour is a bit more expensive, but it turns out great in every application we've used it for so far. People can't tell that our pie crusts are GF. Bread and cake come out a bit denser than with regular flour, but that is across the board with GF flours. This is the only one we buy now.

Pricey but worth it
Best GF flour ever! It makes the BEST pizza! You truly cannot tell it isn't made with gluten. So worth the price in my opinion.

Does anyone know if this flour lasts longer than a year?
I purchased the 11 pound bag hoping it would last two years. I can't find an expiration date on the bag, but I do see a date that says 7/19/2025. I'm wondering how I could use all this flour in a year, lol!Has anyone kept it longer than a year?

Game Changing GF Flour!!!!
I know this flour is not suitable for those with wheat allergies, but my research shows it is fine for those of us with Celiac and I have been using Caputo for over a year with no issues. The difference in flavor and texture is unbelievable! My bialys taste like bialys again. I made a challa dough recipe that I used for raisin bread yesterday (From GF Artisan Bread in 5 Minutes a Day) and I would serve it to anyone - they would never guess it is GF. The flour is expensive so I do not use it for things like muffins and cookies which have been fine with Bob's Red Mill 1 to 1 flour. But for breads? NOTHING compares to Caputo!!!!!!
