Q: How do you clean the grease that builds up on them during baking? I'm going to use them in a toaster oven. Anyone have experience with that?

Ceramic and porcelain baking pans cook food evenly and are extremely durable for everyday use. If you aren't careful, however, you can end up with patches of burned-on food residue that can be difficult to remove. Instead of spending hours scrubbing your ceramic baking dishes with harsh abrasives, use an easier method that is less likely to scratch your baking pans. Let pan fully cool do not place water when hot or it will crack Step 1 Wash the pan with a mild liquid dish soap and nylon scrubbing sponge. Remove as much of the food residue as possible, but do not worry about scrubbing too hard at this stage. Step 2 Rinse out the pan and sprinkle a thin layer of baking soda into the bottom. Add up to 1/4 cup of white vinegar. The vinegar and baking soda will bubble up as they react. Step 3 Add 1 quart of hot tap water to the pan and place it in the oven at 325 degrees Fahrenheit for at least 30 minutes. Step 4 Remove the pan from the oven and allow it to cool and soak in the water, vinegar and baking soda overnight. Step 5 Wash the pan as usual and dry it thoroughly before putting it away.

Q: how many ounces does a dish hold?

I poured 8 ounces of water in the dish and the water line was quite close to the top. When I poured 6 ounces of water in the distance from the top was more what one would normally want. Hope this helps. The quality is good and they are reasonably thick. I like the product.

Q: are these large enough to serve single size seafood casserole

Yes, perfect for one serving or two small servings.

Q: can I cover these with non-stick tin foil when baking?

I would say yes as they're baking dishes same as larger size.
