Mandarin style wok
I had a Cantonese style wok for years and it didn't fit with my way of cooking. It sat on a ring over the burner and you had to hold onto one of the handles to avoid jerking the thing off the stove by accident. This is a Mandarin wok with a straight handle and a 10cm flat area on the bottom. This is better for stir fry and sautéing, in my opinion. De Buyer is essentially the same as Matfer and Mauviel: they all make great carbon steel. I like carbon steel because it heats up quicker and more uniformly than cast iron, and it's lighter. This is an excellent addition to the batterie de cuisine.

My new favorite wok!
This wok is the easiest ever to clean! Once seasoned, nothing has stuck on or refused to come off with just a plastic scrubbier and hot water. You MUST take care of it, however, and follow the guidelines. The only small negative is that the bottom flat portion is a little small for my range top, and when empty or heating up will tend to fall sideways ... when full, not a problem. Totally thrilled with the weight and cooking characteristics!

Quality pan but "wok" design is debatable
Quality solid pan but design has some issues, it depends on how you use it. The small bottom is flat but still needs a wok ring to be stable because of the weight of the handle, it can have a dangerous risk of falling over with hot grease inside. I'm not sure the small bottom would work well at all on a non gas stove, and the thickness of the steel sides do not get as hot as a real wok, even on a gas stove. Heavier than a wok to flip contents.On the plus side it is a solid pan, you can cook sort of wok stir fry style, and the bottom makes a nice oil fryer. It's not totally a wok, and it doesn't have the surface area of a flat 10" skillet. So it either versatile or a compromise depending on how you look at it. It isn't as big and messy as real wok, but really isn't big enough to cook like a 10-12" skillet.

That famous De Buyer quality
I've recently gotten some De Buyer carbon steel pans and have been impressed, so I decided to get this wok to complement my large, stainless Calphalon wok. Seasoned it and got right to using it. I've got a gas stove and the flat bottom is relatively small. Consequently it wasn't as stable as I'd like on the grates. I bought a cheap wok ring which makes all the difference. It has the additional benefit of focusing the heat more on the bottom center of the wok. The wok itself is on the small side, but as there are only two of us, it is ideal for our regular use. I am very happy with my purchase.

Well made!
It works great! It heats up fast on an induction stove top. It’s so-so on ease of cleaning. It took several tries to get it seasoned correctly, it’s harder than a cast iron pan. Now that it’s seasoned it works well, not non-stick but it is fairly easy to clean!

Badly balanced
This tips over very easily with its heavy heavy handle. Should have been wooden handle or lighter metal

Beautiful
Took some time to break it in but 2 weeks in and it’s seasoning really nicely. Great wok for frying as it’s deep and does a great job holding temperatures.
