This brine is awesome...2nd year in a row I've used it and I'll be doing it again next year!
This is my second year using this brine and it's been great both times. Having everything - brine, bag and seasoning in one package made it so easy. My parents have always done bag turkeys which were fine, but I wanted to do something different now that Thanksgiving is at my house. I would recommend brining for longer than the instructions say. I brined my 15lb. bird for 24 hours both times because I did some research online and most "homemade" brines say to leave it longer in the solution. My turkeys were moist and flavorful. I used a fresh organic turkey so that may make a difference on the reviews that say it was bland (my turkeys were NOT bland and my family is a seasoning family - we put pepper on our pepper). I've never brined a frozen bird, but you would obviously need to thaw it completely before you brine it for it to be effective. I may be creative next year and use a half melted butter-half olive oil mix (instead of all olive oil) to rub on the bird as I saw that on a cooking show and it seemed like a good idea. I bet you could also use Crisco, but that seems sacrilege on my organic bird. :) The package says to use the roasting pan for support when your bird is brining and that is a good idea. I also rolled up some hand towels and wedged them around the bag, inside the pan to support the bag and make sure it didn't tip over and then put the whole thing in the fridge. I took my turkey out about 90 minutes before I wanted to put it in the oven to rinse it, dry it (thoroughly!! - inside and out), and apply the oil and seasoning. Any extra time, I let the bird sit to get closer to room temp. Make sure your oven is pre-heated - don't put your bird in a cold oven. I cook my turkeys at 325 on the roasting rack in a roasting pan with onions (cut in wedges), carrots (no need to peel - just wash and cut in chunks), celery (wash and cut in chunks - use the tops too if you want) and chicken (or turkey) stock in the pan to catch the drippings. It's not an exact science, just fill it up with one layer of veggies and add some stock. (If you don't have a roasting rack, you can put your bird on the veggies as the "lift" so you make sure the bottom cooks too. I would recommend some full celery stalks (like the slats that hold up your mattress) for good support and then put everything else around it and still add the stock.) You can add more stock during cooking if it evaporates up and your drippings are hitting a dry bottom. There is no need to baste the turkey unless your turkey isn't browning. If it's over browning on the wings, thighs or top, tent some foil and place over that area to slow it down. Good luck with your turkey...this brine is worth the time and money!

A Great Introduction To Brining
This is first for me. I have brined various poultry over the years and have never bothered with a kit as it's rather easy to get a good brine going. A brine is fairly simple to make and will bring a level of juicy tender awesomeness that you’re going to love. The first time you brine your bird for turkey day (or maybe some other occasion) you’re going to ask yourself “why haven’t I been doing this all along.”Anyhow… I decided to give this kit a go because I was in a rush, had no time for the store, and I was out of almost everything I needed for my home-made brine mixture for turkeys. This packet was cheap and quick and I needed a few things from Amazon anyway...Result? Perfection - it's not my recipe - but it's darn good!I smoked a 9.5lb turkey breast and brined it in this mixture. I smoked my breast for 8 hours at about 215º and the last hour @ almost 350º to get the skin nice and crispy. I pulled my bird out of my upright @ 155º, carved it up, and dove in. Impressed! The rub and brine in this package is awesome! Well worth the cheap $8 price and I plan to order another one as a quick-fix when I don’t have the ingredients for my home-made brine.I usually smoke my birds but this would be perfect roasted in your oven! All of my guests loved the turkey and asked for the recipe. This is a great kit for anyone new to brining or wanting something quick and easy like me.A few things to consider with this kit…The brining bag is worthless (to me). I have dedicated ice chests which I use for brining. If this is not an option for you, use a large kettle or pot which you can cover fill with ice and stick in your fridge. I use ice water and ice cubes when I brine (not just cold water per the directions). Make sure you keep your brine rather cold during your brining process. I brined my breast for just over 14 hours and that was perfect. Another thing... Don’t over do it with that seasoning packet!!! I basted my bird with real butter then covered the bird with only 2/3 of the packet! Sure it was only a breast but even if I was brining an 18lb clucker, I wouldn’t use the whole thing… The seasoning in the rub is rather strong and you don’t need much. However, this is really up to you and your guests… Do they like a strong flavor? If so, use the whole darn thing! I prefer a good balance between the natural smoke or roasted flavor and flavor imparted by the brine IN ADDITION to the rub on or below the skin. It is noted, that I did not put this rub UNDER the skin. I put it ON the skin andLong story short – I’ll buy this again! I am sure they’ll be 2-3 more cluckers in smoker before thanksgiving and this recipe/kit will probably be used to brine atleast one of them.

I never used a brine kit and rarely bake a Turkey. The kit came complete with a big bag to soak the Turkey in and thorough instructions. The Turkey came out excellent!
